#SOL 6 Preserved vegetables under snow
I get a lesson"locally-produced and locally-consumed of Niigata prefecture". I'm learning about snow and way to preserve food with snow. In the class, I learned about vegetables under the snow. The way to preserve vegetables (espesially vegetables harvested in winter) under snow without harvesting is "yukisita tyozou", Storage under snow. It has two characteristics. Environment of stable low temperature and environment of high moisture lebel. On the other hand, refrigerator temperatures go back and forth between 1 and 7 degrees Celsius. Bsides, it is dry in refrigerator. So, preserved vegetables under snow is sweeter and more delisious than normal vegetables. This class made me want to try the preserved vegetables under the snow.
